India - Monsooned Malabar AA
This very unique coffee hails from Suntikoppa, Karnataka in India. What makes this coffee so unique is that the coffee is left in open warehouses during India’s monsoon season, where beans are allowed to swell and are repeatedly raked daily. The process was developed to emulate what coffee went through during long sea voyages in the wooden sailing ships of the past. Essentially it’s a fermented/aged coffee. We find Monsooned Malabar to have more body and less acidity than any other coffee we offer. It’s nowhere near as bizarre in flavor as some make it out to be. We feel it’s a smooth, low acid, and full bodied coffee with a nice spicy and nutty flavor profile. It makes for an excellent drip or pour-over, but if you want a SO espresso that’s full of crema, nothing else compares.
India Monsooned Malabar is a very unique coffee. The plantations process to coffee for up to 16 months. The fruit is picked and left to dry in bean houses pending the monsoon season, and then the sides of the houses are opened up to permit the monsoon winds to circulate around the coffee while it is repeatedly raked and turned by hand. During this time the beans swell, and they become very light in color. The bean builds in flavor and the beans acidity is reduced. This coffee is excellent as a SO (single origin), however IMM can be blended with just about any coffee to create interesting flavor profiles. We think you’ll like this coffee. We suggest roasting it as you would a decaf or a soft coffee bean variety. It is a bit tricky to roast. So watch it carefully.

Roasting Recommendations: Begin with a Medium Dark roast. Caution should be taken when roasting, India Monsooned Malabar can burn quickly,. Watch this roast carefully. Roasting it to a Vienna roast will look lighter than the normal. Monsooned Malabar makes an excellent espresso and excels as a blending tool.
